    i wish more restaurants said how they get each spice level, i’ve had some places that just dump in so much red chili that it makes the whole dish inedibly bitter

      In my professional opinion a dish should just be as spicy as it is. All spicy things have a taste aside from being spicy, its not like we’re adding more pure capsacin. Adjusting it fucks up the balance, a little bit here and there can be done but either extreme is gonna ruin the dish.

      Habanero is hot as shit, Mexicans have like three thousand chilis that can kill you. India is certainly home to a few but Indian cuisine doesn’t really emphasize spiciness to the degree Mexican cuisine does

      Habanero is solidly in the Indian spice range. I imagine American spicy would be something like a poblano.

    All the Indian places near me charge extra for extra spicy and it isnt even that spicy. Its just not fair

      This reminds me of a “humans are space orcs” trope, dragon race who have food so spicy it’d kill most species in the galaxy, but human spice seekers are disappointed in it. “You call this deadly spice? There’s a Mexican place that serves hotter spice in my hometown. Come on, don’t give me the mild sauce even though I ordered extra spicy, just because I don’t look like the chefs.”

      A few times, when I asked for it extra spicy, I told them to tell the person making it to “make it like they hate me”. That tends to work alright.

    This doesn’t make sense to me… a lot of american food is at least somewhat spicy. Just not in chain restaurants usually. But I’m a spice fiend so maybe I just seek it out.

      i think its somewhat regional in addition to other, personal/cultural stuff.

      i grew up and lived in southern states primarily and spent some time in the desert southwest. i also worked alongside a lot of latin americans and got schooled that way. hot days + hot food, yum yum. cajun food, nashville hot chicken, all day long.

      i still didn’t consider myself to be someone who was into spicy food “more than average” until i moved up north, where a lot of people are a bit more precious about their food having some spark to it. not everyone, mind you, but a lot. i see more warning signs at thai/mexican/indian restaurants here, etc. i also bumped up my ordering levels here, if they ask how spicy.

      it does seem a bit generational too, like younger people here are more into spicy foods and hot sauces than the olds like me.
